The ancient Aztecs are said to have prized cuitlacoche long before Europeans arrived in North America. It's smoky-sweet flavor has been characterized as similar to that of white mushrooms, but with the additional sweetness of corn.
Cuitlacoche is used in a variety of traditional Latin American dishes such as soups, sauces, with rice and as a filling for tortillas, but may also be used in any preparation where cooked mushrooms would be appropriate.
Canned cuitlacoche can be found in Mexican groceries, but the whole kernals of frozen cuitlacoche are far superior in flavor and texture. If you desire a truly authentic Mexican dish, frozen cuitlacoche is without compare and is the next closest thing to fresh.
