
Fresh Eastern Fiddleheads - per lb
Fiddleheads typically first appear each year in the early spring during April and May. Although the word "fiddlehead" could refer to any fern shoots, the fiddleheads of the Ostrich Fern (Matteuccia struthiopteris), are considered to be the choicest. The tender little rolls of fern are harvested within an inch or two of the ground as soon as they appear.
Eastern Fiddleheads are a rich, deep green color and are about 2 inches long and 1-1/2 inches in diameter. While their flavor is often been to asparagus, green beans or artichokes, the truth is that their flavor is uniquely their own.
