The finest Italian capers are first pickled, then packed in salt to retain their flavor and crunchy texture far better than brined capers.
Before using salted capers, soak the capers in water for 15 minutes, rinse, then soak again. Use to garnish foie gras slices, smoked salmon or give contrast to salads and roasted meats.
