Fresh Oregon Black Truffles (Leucangium carthusianum) look somewhat similar in appearance to Black Summer Truffles from Europe, but the resemblance ends there. Chefs and adventurous cooks across the country prize Oregon Black Truffles as a uniquely American delicacy, but one that is just as delicious and intriguing as their better-known (and much pricier) European cousins. 

Oregon black truffles differ radically from European truffles.  To start with, they have a pronounced fruity-musky aroma and flavor that is all their own.  For another thing, the exterior of the Oregon black truffle is soft and slightly moist, quite different from the hard "warty" black exterior of their European counterparts.

Our recommendation?   Whether you are a veteran truffle lover or just a curious fan of unusual food, give Oregon black truffles a try.  Don't expect them to taste or smell like European truffles - just keep an open mind and palate and you will be pleasantly surprised by the musky, sensuous flavor of this uniquely American truffle.

Using Oregon black truffles: Much of the appeal of the Oregon black truffle lies in its distinctive musky aroma which can be destroyed by overcooking. It's recommended that truffles be added late or at the end of the cooking process. You can also simply shave them raw over your favorite dish like risotto, mashed potatoes, or even scrambled eggs.

Store fresh truffles in the refrigerator submerged in a container of uncooked rice or wrapped loosely in paper towels. Fresh truffles are best when used within a week or less after they arrive.
